یک متخصص تغذیه گفت: برخلاف باورعمومی مردم مقدار لطمه به مواد مغذی غذا هنگام پخت با ماکروفر کمتر از سایر روش های پخت است.

دکتر احمدرضا درستی گفت: پخت با ماکروفر ممکن است موجب ایجاد برخی ضایعات در مواد مغذی شود٬ ولی مقدار لطمه به غذا هنگام پخت با ماکروفر بیشتر از سایر روش های پخت نیست و استفاده از ماکروفر برای پخت و پز مناسب تر از بسیاری دیگر روشهای پخت است. وی، مدت زمان کم تر حرارت دهی را به عنوان یکی از دلایل برتری پخت غذا با ماکروفرعنوان کرد و افزود: مدت زمان کمتر احتمال تشکیل بو و خشک شدن غذا را کاهش می دهد. همچنین مواد مغذی آن را نسبت به بقیه روش های پخت بیش تر حفظ می کند.

این عضو هیات علمی دانشگاه علوم پزشکی دانشگاه تهران افزود: از بین رفتن باکتری ها و دیگر عوامل بیماری زا باعث جلوگیری از ایجاد سمیت دراثر پخت با ماکروفر می شود که این از دیگر برتری های پخت غذا با ماکروفر است. درستی با اشاره به این که قدرت گرم  کنندگی اجاق ماکروفر در سطح غذا بیشتر است، توصیه کرد: بهتر است قطعات کوچکتر مواد غذایی در مرکز ظرف و قطعات بزرگتر در کنار ظرف باشند و درب ظرف در طی پخت بر روی آن باشد تا بخار در ظرف جمع شود و به پخت مناسب تر غذا کمک کند.

وی با بیان این که در ظرف نباید کاملا بسته باشد تا مقداراندکی از بخار نیز خارج شود، افزود: بهترین ظروف برای استفاده در ماکروفر، ظروف شیشه ای هستند و استفاده از ظروف فلزی معمول می تواند خطرناک باشد. این متخصص تغذیه در رابطه با اتمام پخت در ماکروفر، اظهار کرد: پس از اینکه کار پخت در اجاق ماکروفر به پایان رسید، باید مدت کوتاهی صبر کرد و سپس غذا را از دستگاه خارج و مصرف کرد چرا که پخت غذا تا مدتی پس از خاموشی دستگاه ادامه دارد.

درستی با بیان اینکه غذایی که یخ زدایی شده آمادگی بیش تری جهت آلودگی میکروبی و فساد دارد، افزود: هنگامی که غذایی در این دستگاه یخ زدایی می شود، بهتر است در دستگاه جا نماند وهر چه سریع تر مورد استفاده قرار گیرد زیرا چنین غذایی آمادگی بالایی جهت آلودگی میکروبی و فساد دارد.
